Needing a light, healthy dinner idea for the work weeknight? Grab some veggies from your fridge, a little seasoning and toss an egg on top.
Last night’s dinner consisted of steamed asparagus tossed lightly with a drizzle of olive oil, freshly squeezed lemon juice and a tiny pinch of sea salt, topped with a sprinkling of shredded parmesan cheese and an egg over easy. I added a little fresh lemon zest and ground black pepper as a personal preference and to emphasize the lemon flavor. Satisfying and filling, and certainly didn’t feel guilty after eating the entire plate!
