Well, once again, here we are on Sunday Night. After a whirlwind of a weekend (they always seem to fly by!) I find myself staring blankly into the fridge trying to figure out what to cook for dinner.
Earlier in the week, I came across a delicious recipe from Bon Appetit and decided to give it a try: Spring Vegetable Risotto with a Poached Egg… I modified it a little by adding some spicy turkey sausage. Definitely a keeper.
