Today, I just was in the mood for something warm and comforting. Quiche. Now what to fill it with? Spinach, Shiitake Mushrooms, Shallots, Garlic. Topped with warm, gooey goat cheese. Yum.
1 lb. spinach, sautéed
1 cup shiitake mushrooms, sliced & sautéed
2 shallots, thinly sliced & sautéed
1 clove garlic, minced
One frozen pie crust
2 egg yolks
1 1/2 cups skim milk
1 tsp kosher salt
1/4 tsp freshly ground black pepper
Bake crust first for 10 minutes at 400*F. Remove from oven and set aside to slightly cool. Turn temperature down to 350*F. Fill pie with ingredients. Top with sliced goat cheese. Bake for 45-60 minutes, until middle of quiche is set. Let cool for 5 minutes before cutting and serving.
