One of my favorite simple, yet delicious, salmon dinners is as follows: preheat oven to 375*F. In a liquid measuring glass, melt a couple tablespoons of butter. Toss in some fresh dill, lemon zest and a little lemon juice, fresh garlic, a pinch of kosher salt and fresh ground black pepper. Whisk to combine.
Lightly and slowly pour the melted butter mixture over the salmon. Top with a couple slices of lemon. Bake about 15 minutes until salmon is cooked through.
I served these little filets on Tuesday night with a baked potato and steamed green beans.
