Two things that everyone loves: funfetti & puppy chow. Why not combine them?!
A couple girlfriends of mine wanted to try to mix these two treats together… and hey, who am I to say no to that request? 🙂
So, this past, lazy Monday evening, AJB, COD and I piled into my peanut kitchen and gave it a whirl. Red wine accompanied our baking… needless to say, we had a hiccup or two along the way. But, more details on that later. After reading through a few recipes and other’s success stories with how they managed this, here is what we came up with.
- 6 c. crunchy rice squared cereal (crispix, etc. will work well)
- 1 12 oz. bag of chocolate morsels (white chocolate, semi-sweet, etc. whichever your weakness is.)
- 3 Tbl. Melted butter
- ¼ c. confectioner sugar
- 1 ½ c. funfetti cake mix
- Extra colored sprinkles just because.
The best way to melt chocolate on the stove, is to use a double boiler. This is where you have a large pot, filled with hot water, set over the stove with a smaller pot floating inside. This is supposed to help keep the chocolate from getting too hot and seizing up. Womp Womp Womp… as we found out, within a matter of seconds, your melted chocolate can go from perfect to ‘WHOOPS!’ overcooked. In our case, I blame it on our wine glasses needing to be topped off. We ended up ruining one bag of melted white chocolate (& embarrassingly admit, another bag of semi-sweet chocolate morsels), by letting the pots get too hot, and having to start over from scratch (twice. Oops). Good thing I had extra milk chocolate morsels sitting in my cupboard. (COD was actually our Saving Grace that evening… she encouraged AJB and myself to nix the double boiler, and go straight to the microwave. Confession: the seized chocolate still tastes delicious.)
In a small mixing bowl, combine the confectioner sugar and cake mix. Set aside. In your double boiler, melt the 12 oz. of chocolate and the 3 Tbl. Of butter. (This can also be accomplished by placing the ingredients in a glass bowl, and microwaving in increments of 20 seconds: stirring in-between each increment… which is what our third attempt was. Again, let’s blame that on the wine & chitchat.)
Place the 6 cups of cereal in a large mixing bowl. Pour the warm chocolate butter mixture over the top of the cereal. Using your hands, gently toss the cereal to coat with the chocolate. Using two freezer side zip lock bags, separate the funfetti/sugar mixture in half. Place half of the chocolate coated cereal in each freezer bag. Toss to coat. Empty the warm treat into a serving bowl, and Enjoy. #yum
