For a weeknight dinner idea if you’re having a couple girlfriends over to, let’s say, watch the Bachelor or any other t.v. show no guy wants to sit through… here is a quick suggestion that my mom, CLW, actually gave me.
Couple ingredients: fresh lox from your deli department, a red onion, thinly grated (use a mandoline if you have one), chopped up fresh dill, some low-fat sour cream, a couple hard boiled eggs, chopped & lightly seasoned with salt and pepper, and some very thin whole wheat bread, cut in quarters.
Arrange a serving plate with a couple small ramekins filled with your toppings, and let people serve themselves. Filling enough, yet not fattening. Goes perfectly with wine… then again, what doesn’t? 😉
