Oh Monday: Once again you rear your ugly head.
The work week has begun again. Back to early bedtimes, gym sessions, healthy eating, and the office.
Now, picking out the protein for dinner is easy throughout the week. However, the vegetables are more of a challenge. Ever get tired of the same rotation? Asparagus, Brussels sprouts, salad, spinach, repeat. Well, tonight I wanted to find a vegetable with a nice crunch and a rich herb flavor to be paired with my Arctic Char.
Here is what I threw together: steamed shelled edamame, thinly sliced radishes, scallions, lemon juice and zest, fresh dill, crushed red pepper flakes, a little sea salt and a touch of olive oil.
