I love breakfast food.
During the week, I rarely have time to make more than scrambled eggs or Greek yogurt with granola, so weekend mornings are when I splurge on big brunch recipes.
My dad, JAW, sent me the new “Weeknights with Giada” cookbook which had some great new recipes in it, I’ve been dying to try! (Given the title of the book, ‘Weeknights’, I originally planned to make this one night last week for dinner, but schedules got hectic so I figured I’d test it out for brunch. I also swapped out the prosciutto for jamon serrano that I crisped up in the oven.)
Review? Delicious. The lemon mascarpone is so good. With the saltiness of the jamon serrano, the lemon adds the perfect accent. A recipe for any meal!
