Now, I am sure you all grew up with something called Monkey Bread… but if not, here is a brief description: Gooey Pillsbury Biscuits, covered with melted cinnamon sugar, that literally melt in your mouth. Well, I came across a little ‘tweaked’ version of it by Paula Deen and tested it out on 8-10 of my girlfriends. Needless to say, it was a hit.
Paula Deen, I hope you don’t mind me sharing your recipe. (Please refer to Foodnetwork.com for any addition details.)…
- ½ c. granulated sugar
- 3 teaspoons cinnamon
- ½ c. butter (1 stick)
- 1 c. packed brown sugar
- 1 (8 ounce) package cream cheese
- 2 (12 ounce) cans refrigerated Pillsbury biscuits (containing 10)
- (Her recipe calls for an additional 1 ½ c. coarsely chopped walnuts, but I’ll admit, I left them out of mine.)
Preheat your oven to 350*F. Find the bunt pan (yes, the one your mother gave you with grandma’s coffee cake recipe when you decided to move out. My grandmas were Nana & Mimi. 🙂 ). Generously spray the pan with a nonstick cooking spray.
Mix granulated sugar and cinnamon, set aside. In a small sauce pan, over low heat, melt the ½ c. butter and brown sugar. Set aside.
Cut cream cheese block into 20 equal cubes (or just wing it as you go along). Press each biscuit to flatten out with your fingers and sprinkle each with about ½ tsp. of cinnamon sugar. Place a piece of cream cheese into the center of each biscuit, wrapping and completely sealing the cheese inside.
Now, place 10 of the cream cheese stuffed biscuits into the bunt pan. Sprinkle with half of the remaining cinnamon sugar, and pour half of the melted butter and brown sugar mixture on top of the first layer of biscuits. Layer the remaining biscuits on top, evenly distribute the rest of the cinnamon sugar and butter mixture over the biscuits.
Place in the oven and bake for 30 minutes.
Remove the hot bunt pan from the oven, and make sure you let it rest for 5 minutes (don’t flip it over yet). After 5 minutes, place a plate on top of the open bunt pan, and flip over. Honestly, this will disappear within minutes.
