BBQ Pulled Pork Sliders w/ Brussels Sprout ‘Slaw

Confession: yesterday, I ate entirely way too much.  I will probably spend the rest of the week making up for the complete pig I was yesterday.  I clearly had no self control and couldn’t restrain myself.  

Good Food = one of my biggest weaknesses.

Ok… Happy Monday.  The work week is upon us.  I hope everyone had a nice weekend!  My certainly was lively!  I spent time with some great friends both evenings, catching up on life over far too many glorious glasses of wine and champagne, went shopping downtown to find a few new dresses for some upcoming celebrations, and even had some time to test out two recipes {breakfast: baked eggs with goat cheese and fresh herbs – recipe soon to come – and bbq pulled pork sliders with a brussels sprouts slaw}.

Last night, after completing a satisfying run on the treadmill, brunch at Homeslice with a group of my close girlfriends {yes, they serve slices of pizza as the garnish to their bloody marys – genius, huh!}, 5 loads of laundry, ironing, cleaning, and spending some time with CBH’s darling nephew, I was able to enjoy some delicious sliders that I had tossed into the crockpot  earlier in the day for dinner – it was worth the 8 hour slow cook time.

This is a must-try.

BBQ Pulled Pork Sliders

ingredients:

  • 1 (2.5 – 3-lb) boneless pork loin roast
  • 1 1/4 cup water
  • 1 3/4 cup barbecue sauce – I chose Lilly’s Q smoky bbq sauce
  • 2 tablespoons brown sugar
  • 1 1/2 tablespoons hot sauce, such as Frank’s Red Hot
  • 1/2 teaspoon freshly ground black pepper
  • hawaiian rolls

Add pork and water into crock pot.  Cover and cook on low for 7 hours.  After 7 hours, take two forks and shred pork, then add bbq sauce, hot sauce, brown sugar and pepper.  Stir to combine.  Cover and cook on low for 1 more hour.  When pork is almost done, carefully slice hawaiian rolls in half.  On hot lightly greased griddle, grill hawaiian rolls until lightly toasted.  Serve with brussels sprouts ‘slaw.  Enjoy.

Brussels Sprouts ‘Slaw

ingredients:

  • fresh brussels sprouts, shaved on mandoline
  • a big scoop low fat mayonnaise
  • crushed red pepper flakes
  • celery salt
  • garlic powder
  • dry mustard

*The brussels sprouts are made entirely from tasting.  Shave the brussels sprouts into a glass bowl,  Stir in mayo little by little until brussels sprouts have desired texture.  Season with red pepper flakes, garlic powder, celery salt and dry mustard.  Add a pinch of each to start and then add more upon taste testing.
