After a long holiday weekend paired with far too many cocktails, decadent meals, and certainly not enough working out, I am back on the straight and narrow. (And factoring in a few more miles on the treadmill…!)
I head out of town in a couple days for a family wedding up at my cousins’ summer home in Northern Michigan. Been counting down the days to be with family and to celebrate! Oh it will be wonderful. Therefore, the last day or two, along with the next day or two, until we are officially on vacation, have been and will be light on the meals: high in protein and veggies/low in carbs, lots of water, no wine and more exercise.
As you all know, I look forward to my meals. Therefore, while trying to watch what I eat, but not want to skimp on flavor, I do my best to make a dinner that will be satisfying.
Last night’s dinner: Arugula Salad with Blackened Cajun Salmon
2 fresh salmon fillets
extra virgin olive oil
a sprinkle of sea salt
low fat fresh mozzarella
freshly ground black pepper
